Warm-up with a Winter Dish

Recipe:Winter Beef Stew with a Cheesy Muffin Top

Ingredients for the Stew:

  • You will need 500gm of braising steak cut into small bite-sized chunks. It is best to order fresh meat delivery.
  • 2 tablespoons of plain flour.Make sure to season the meat with pepper and salt.
  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 2 large parsnips, cut into small chunks
  • 450gm carrots, cut it into chunks
  • 2 bay leaves
  • 2 tablespoons tomato paste
  • 350ml red wine or extra stock
  • 400ml vegetable stock

Ingredients for the topping:

  • 225gm plain flour
  • 3 tablespoons baking powder
  • 140gm cheddar cheese, grated
  • 2 tablespoon olive oil
  • 150ml regular milk

Method for the Stew:

Take your beef and season it with flour. Heat the oil in a casserole and fry the beef untilbrowned all over. When it is done, take it out and set it aside.

In the same casserole, put the carrots, parsnips and bay leaf and fry it for 2-3minutes. Put the beef into the pan along with the tomato paste, wine, and vegetable stock. Let it boil, thencover it and cook for 1.5 to 2 hours until the meat is tender.

You caneat it without the topping, and it will be equally delicious. You can also make it ahead and freeze it for up to a month. Make sure you defrost it thoroughly before topping  itand putting it in the oven.

Method for the Top:

For your beautiful and delicious topping, sift the seasoned flour and baking powder in a bowl and add half the grated cheese. You can add some mozzarellafor that extra touch. Mix in olive oil and milk.

Mix the mixture until a sticky dough. You can add more milk to change the consistency of the dough. Spoon the dough over the beef and vegetables. Once done,sprinkle the remaining grated cheese and bake for another 15 minutes in a preheated 150 degreeCelsiusoven. Cook until golden brown on the top. Take it out and you will have a lovelytopped beef stew. Enjoy your meal!
